Alcoholic fermentation was first carried out in steel vats and Pinot Noir was macerated on the skins for a few hours (rosé maceration) to intensify the aromas and tones of the grape variety. In the spring following the fall harvest, the wine was transferred to vats for blending of the Grand Vin, with 10% of the Reserve from past vintages. The wine then undergoes a second fermentation in bottle, aging on clay for a minimum of 24 months, and a final 2 months of aging after the delestage process. Taste description: Smooth as mousse on the outside, with a delicate appearance and a long finish. Pale pink color due to the maturity of the phenolic compounds in Pinot Noir and its vintage. Aromas are complex, fragrant and lively, with intense flavors of wild red berries and ripe stone fruits, giving a heady, warm impression.
