Alcoholic fermentation was first carried out in steel vats, followed by skin maceration of Pinot Noir for a few hours rosé maceration to intensify the aromas and tones of the grape variety. This was followed by a secondary fermentation in bottle and aging of the wine on the clay for at least 24 months, with a further 2 months of aging after the delestage process. Presentation of the palate: From the “heart” of the must, the first must is obtained by slowly and gently pressing the whole bunch of grapes, fermented in stainless steel and then aged in oak barrels for 6 months on clay. The final blend is made from the finest base wines the following spring after the harvest, followed by a second fermentation in bottle and a minimum of 9 years of rest, and a final 6 months of aging after the delestage process.
